Timeless recipes from Italy’s gelato tradition, crafted with the finest ingredients.
Made with the world-renowned pistachios from Bronte, a village on Mount Etna in Sicily, known as "green gold". Their naturally intense, nutty flavor makes this gelato unlike any other pistachio you'll find. No added colors, no artificial flavors, just pure pistachio perfection.
Custard has been a beloved European dessert since ancient times, and for good reason: milk and eggs make an irresistible combination. Our gelato is made with fresh whole milk and pasture-raised organic eggs, resulting in a creamy, rich, and timeless treat.
Our Chocolate gelato is made with 70% dark chocolate, creating a rich, velvety, and deeply indulgent experience. Completely vegan, it's so creamy and intense you'd never guess there's no milk, and you won't even miss it. Every bite is pure chocolate bliss.
Our Coffee gelato is made the traditional way, with real, freshly brewed espresso using premium Arabica beans. Fragrant and naturally sweet, this coffee brings notes of chocolate, caramel, and a gentle touch of acidity. The base is enriched with milk and organic pasture-raised egg yolks for a smooth, velvety texture that perfectly balances espresso's bold character.
Fiordilatte, literally "flower of milk", is the most traditional Italian gelato flavor, similar to what in the U.S. is known as sweet cream. Simple, pure, and delicate, it's made with fresh whole milk and cream, letting the natural flavor of dairy shine without distractions. Smooth and timeless, it pairs beautifully with any other flavor.
This flavor is so old it comes with a bit of history! In 16th-century Florence, Bernardo Buontalenti, architect, artist, and passionate cook, created a frozen dessert made with milk, sugar, and egg yolks for the powerful Medici family.
That simple yet elegant recipe is considered the ancestor of modern gelato. Smooth, creamy, and reminiscent of a delicate custard, Crema Fiorentina is our tribute to the very origins of gelato.
Gianduia is a classic chocolate and hazelnut creation from Turin, Italy, dating back to 1806. It was invented when local confectioners, facing cocoa shortages due to Napoleon's trade restrictions, cleverly blended precious cocoa with the region's prized hazelnuts from Piedmont, and a legend was born.
We still make our own gianduia cream the traditional way, mixing rich chocolate with roasted Piedmont hazelnuts for a smooth, velvety gelato that's pure Italian indulgence, just like it was over 200 years ago.
We call this chocolate "old school" because it's made the traditional way, with fresh milk and egg yolks. In the past, many gelato makers used yolks as a natural emulsifier to create a richer, creamier texture. While most modern recipes no longer require eggs, we bring that tradition back, using only fresh whole milk and pasture-raised organic eggs to deliver a smooth, velvety chocolate experience that feels timeless.
Made with nocciole del Piemonte IGP (Protected Geographical Indication), this hazelnut variety is considered the best in the world for its round shape, rich aroma, and exceptional flavor after roasting. Its natural sweetness and buttery notes shine through in every spoonful of this smooth, creamy gelato.
Stracciatella is a milk-based gelato filled with fine, irregular shavings of chocolate that give it a deliciously crunchy texture. Originally created in Bergamo, northern Italy, in 1961, this classic flavor remains one of the most beloved.
We don't use chocolate chips, instead, we hand-cut irregular chocolate shavings from a large dark chocolate block, giving every bite a perfect mix of creaminess and crunch.
To make tiramisu the traditional way, you need ladyfingers, egg yolks, sugar, coffee, mascarpone, and cocoa powder, and that's exactly how we make our gelato version. We even bake our own ladyfingers, so this flavor is completely gluten-free. It's like eating tiramisu in gelato form: rich, smooth, and wonderfully creamy!
Zabaione is a sweet, frothy cream made with egg yolks, sugar, and fortified wine, in our case, Italian Marsala. This centuries-old recipe has deep roots in Italian tradition and is also beloved in South America, where it's known as sambayón in Argentine and Uruguayan cuisine. The flavor is rich and velvety, with the Marsala wine adding a naturally warm and aromatic note that makes it taste both comforting and elegant, even as a gelato.
modern italian
A contemporary take on Italian classics: creative pairings and refined twists inspired by today’s Italy.
Inspired by the classic Italian pastry Fiamme al Cioccolato, our gelato recreates every layer of this favorite treat. A creamy milk chocolate base is studded with homemade gluten-free pasta frolla crumbs for a delicate crunch and finished with shards of dark chocolate that echo the pastry's glossy exterior. Every scoop captures the airy, chocolatey delight of the original.
A tropical twist on the classic Stracciatella, Coccotella is a creamy vegan gelato made with silky coconut milk. Mixed with dark chocolate shavings and topped with golden toasted coconut flakes, it's the perfect balance of refreshing and crunchy.
To celebrate our wedding anniversary, we created a flavor inspired by the traditional Torta degli Sposi (wedding cake) and the beloved Italian almond confetti, or Jordan almonds.
Why almonds? In Italian weddings, the sweet sugar and the bitter almonds symbolize the sweetness of love and the bitterness of life. The confetti are usually given in groups of five, representing happiness, health, longevity, wealth, and fertility.
To honor this tradition, we used almonds in five different ways: natural almond extract in the base, almond flour cake soaked in almond syrup, marzipan pieces, and toasted almonds on top, all nestled in a creamy, delicate custard base. A sweet celebration of love and tradition!
This flavor combines the brightness of lemon with the richness of ricotta for the ultimate creamy delight! Our smooth ricotta gelato is infused with real lemon and just the right amount of zest for a fresh, tangy kick. Scattered throughout are chunks of our handmade gluten-free lemon ricotta cookies, soft and fluffy, adding both texture and an extra layer of citrusy creaminess. Perfect for those who crave something refreshing yet indulgent.
Inspired by Mon Chéri, the famous French chocolate confection combining cherries and chocolate, this flavor is our playful twist on a classic. The name Mon Cherry mixes French and English (it means "my cherry"), a fun nod to its main ingredient. The oat milk base has a touch of cocoa butter, which perfectly enhances the tart cherries and rich dark chocolate for a smooth, elegant, and slightly indulgent vegan gelato.
If you love Sicilian cannolis, you're going to love this flavor! Made with a rich base of whole milk and sheep's milk ricotta, then topped with homemade gluten-free cannoli shell pieces, crushed pistachios, dark chocolate shavings, and a touch of orange zest.
Not a single ingredient is missing: it's a full Sicilian cannoli, reimagined as gelato!

In North America, pumpkins are a beloved symbol of the autumn harvest. For this seasonal flavor, we roast real pumpkin in the oven to bring out its natural sweetness, then blend it into our creamy gelato base with a mix of warm spices for that perfect fall taste.
This flavor is a descendant of the Spanish Malaga gelato, created when Europe began importing rum from the Caribbean in the 17th century. To honor its origins, we use muscovado cane sugar, loved across the Caribbean for its deep molasses flavor, and a small-batch dark rum from Barbados, bold and aromatic, capturing the spirit of the islands.
We finish it with a mix of dark and golden California raisins soaked in rum for days. The blend of dark rum, milk, and egg yolks gives the gelato a warm creamy-ivory color, reminiscent of Caribbean sand, and a taste that feels like an island getaway in a cup.
We make this flavor using real Bourbon vanilla beans from Madagascar, Grade A Gourmet quality. Unlike most "vanilla" products that rely on artificial flavoring, we infuse our gelato with the natural sweetness and buttery aroma of real vanilla pods, resulting in a rich and creamy flavor that feels pure and authentic.

We first discovered it in Tokyo, at a small spice shop that sold a single ice cream flavor made with their own shichi-mi mix. We loved it so much that we brought the same spices home to recreate it.
The base is a delicate French vanilla that enhances the complexity of the spices while keeping it creamy and balanced.

Skyr (pronounced skeer) is a traditional Icelandic dairy product, creamy like Greek yogurt but milder in flavor. We use Icelandic Provisions Skyr, made with original Icelandic cultures, to create a rich and velvety gelato topped with a swirl of homemade fruit sauce.

Speculaas is a type of spiced shortcrust biscuit, traditionally baked for St. Nicholas’ Day in the Netherlands and Belgium. They are thin, very crunchy, caramelized, and slightly browned, made with a spice mix of cinnamon, nutmeg, cloves, ginger, cardamom, and white pepper.
We make our own gluten-free Speculaas cookies that we use not only to top the gelato with crumbles but also blend into the gelato base for an even deeper flavor!

Ube, or purple yam, is a tuber native to the Asian tropics and a beloved staple in Filipino desserts. Its vivid violet color and naturally sweet, nutty, and slightly earthy flavor make it unlike anything else: think of a mix between vanilla, pistachio, and coconut. The first ube ice cream recipes date back to 1922, and we honor that tradition by adding a touch of vanilla to bring out its delicate aroma and creaminess.

Xocolātl (Aztec chocolate) is the Nahuatl word for chocolate, and originally it referred to a bitter drink brewed by the Aztecs with cocoa beans, spices, and water.
We created this flavor to honor those ancient roots, blending rich dark chocolate with red chili pepper, cinnamon, and vanilla. A tribute to the sacred drink the Aztecs believed was a gift from the gods.

Yum cha means "drink tea" in Cantonese, and it's a beloved brunch tradition in Cantonese-speaking regions, especially Hong Kong.
This flavor captures the essence of that experience, blending pu'er fermented black tea with a fruity infusion of lychee, mango, and orange. A hint of cinnamon adds warmth, while dried flowers bring a delicate, floral finish. A perfect balance between tea, fruit, and fragrance.

This flavor is pure indulgence. Made with 70% French dark chocolate, it delivers an extraordinarily rich and decadent taste: so creamy and intense that its texture feels almost like a ganache. The chocolate reveals a deep, warm bitterness with aromatic notes that linger beautifully on the palate. It's completely water-based, yet unbelievably creamy, proof that great chocolate needs no milk to shine.
Gorgonzola is a creamy Italian blue cheese made from whole cow's milk and protected under the PDO designation, meaning true Gorgonzola can only come from specific provinces in northern Italy, mainly Lombardy, and that's exactly where we source ours.
We pair it with our house-made caramelized walnuts, which add a gentle crunch and toasted sweetness that perfectly balance the cheese’s bold flavor.
A celebration in every scoop! This flavor starts with a luxurious French Vanilla base, made with fragrant Madagascar vanilla beans and rich egg yolks, then gets filled with colorful pieces of our homemade macarons. Sweet, chewy, and elegant, it's like a bite of Parisian joy in gelato form!
Two Italian icons, gelato and extra virgin olive oil, come together in a surprisingly harmonious flavor. We'd describe it with just one word: delicate.
We use extra virgin olive oil from Tuscany, prized for its golden color, fruity aroma, and smooth, slightly peppery taste. It's then infused with fresh rosemary, one of the most aromatic and vibrant Mediterranean herbs. The result is a creamy, elegant gelato that's both savory and refreshing. A true taste of Italy.
This flavor is dedicated to our beloved corgi, Chimichurri, who crossed the rainbow bridge. We make it only once a year, on the anniversary of her passing.
It's a tribute made with love: a smooth fiordilatte base swirled with seven vibrant fruit sauces representing the colors of the rainbow: strawberry, raspberry, blueberry, blackberry, mango, apricot, and kiwi.
Each bite is a little different: fruity, creamy, and full of heart.
Parmigiano Reggiano is a hard, aged cheese from Emilia-Romagna, Italy, traditionally paired with fruit. This flavor is inspired by a childhood memory: my nonna would offer me a slice of pear with a piece of Parmigiano to help me enjoy fruit. The balance of sweet and savory is perfectly harmonious, just like cheese and fruit should be, making this gelato an elegant surprise, ideal for impressing guests at any event.
To create this refined and aromatic pairing we use authentic balsamic vinegar from Giusti in Modena (Italy), a family-owned producer since 1605. The delicate sweetness of pear sorbet meets the tangy depth of aged balsamic vinegar, resulting in a perfectly balanced sweet-and-sour flavor with a fragrant finish.
We infuse French Échiré butter with Italian truffles for days, then turn it into a super-creamy gelato base. A touch of Italian Parmigiano Reggiano enhances the flavor with a subtle hint of salt. The result is a rich, buttery gelato with delicate truffle notes.
So many of our customers love our homemade waffle cones that some even joked we should turn them into a gelato flavor. Well, we took the idea seriously! Our fiordilatte base is infused overnight with freshly toasted waffle cones, allowing their buttery sweetness and warm vanilla aroma to gently blend into the milk. Once the gelato is ready, we finish it with a sprinkle of golden waffle cone dust. It's the essence of a gelato cone, reimagined as gelato itself.
A smooth, creamy white chocolate gelato forms the base, sweet with subtle notes of vanilla. On top, a bright passion fruit sauce adds a tangy, floral contrast that cuts through the richness, creating a perfectly balanced mix of sweet and tart.
This flavor combines a creamy, velvety white chocolate base with homemade gluten-free Speculaas cookie pieces that add a delightful crunch in every bite. Speculaas are traditional Dutch spiced cookies flavored with a cozy mix of cinnamon, nutmeg, cloves, ginger, cardamom, and white pepper: the perfect balance of warmth and sweetness.
To make it even more indulgent, we swirl in rich, caramelized Speculaas cookie butter throughout the gelato, making every spoonful irresistibly smooth and aromatic.

Our Gingerbread gelato brings all the cozy warmth of the holidays into a scoop! Made with a festive blend of spices — ginger (of course), cloves, nutmeg, and cinnamon — and sweetened with rich muscovado sugar for that deep molasses flavor.
We fold in homemade gluten-free gingerbread men, a drizzle of caramel sauce, and top it all with colorful holiday sprinkles. Every single ingredient, from the cookies to the sprinkles, is vegan and gluten-free, so everyone can enjoy a taste of Christmas cheer!
Panettone is a traditional Italian sweet bread from Milan, enjoyed during Christmas and New Year. Its long proofing process gives it a soft and fluffy texture and a rich, buttery flavor.
For this festive gelato, we make our own artisanal gluten-free panettone and blend it into a smooth mascarpone cream base, adding candied oranges, cranberries, and chocolate shavings. It's one of our favorite Italian holiday traditions, reimagined as gelato.

GELATO + ESPRESSO SHOT
An affogato, Italian for “drowned”, is an Italian coffee-based dessert. It usually takes the form of a scoop of classic gelato flavor such as vanilla (but also hazelnut or chocolate), topped or "drowned" with a shot of hot espresso.
CORN FLOUR + SUGAR + SOY MILK + VANILLA + VEGAN BUTTER
To give a complete artisanal experience we decided to make our own fresh waffles, using gluten-free flour and vegan ingredients.
The gelato cone was invented by Italo Marchioni, an Italian resident in New York in 1903.
FRUIT + WATER + SUGAR
Granita is a Sicilian semi-frozen dessert simply made with water, sugar and various flavorings, often fruits.
Although its texture varies from coarse to smooth, it’s always different from that of gelato, which is creamier, and from that of sorbet, which is more compact.
These characteristics make granita distinct and unique.
Granita is usually eaten in a cup with a spoon straw.
We only use California grown fruits from local farms.
